Like many deep coloured vegetables, purple carrots are loaded with antioxidants which are great for repairing and preventing cell damage.
When boiling this variety, colour will leach out dramatically in the water but the carrots still remain a deep purple for serving. (The core may remain white). Very young, raw thinnings are a colourful addition to your salads.
